Tomato Sunrise Cocktail

www.whiskeyandwheatgrass.com Chef Katie Coleman prepares a fresh summer cocktail using homemade tomato juice, tequila, lime and fresh cilantro. Tomato Sunrise Cocktail by Chef Katie Coleman, Durham Spirits Company Homemade Tomato Juice: 2-3 heirloom tomatoes 1 clove garlic Dash Olive Oil Dash Kosher Salt Puree in blender until smooth. Strain through wire mesh strainer into a measuring cup or small pitcher. Set aside, best used right away. 1-2 handfuls of fresh cilantro, stems and leaves Juice from 1/4 lime 1.5 ounce tequila 2 ounces homemade tomato juice Fresh Ice Place cilantro in your cocktail shaker with lime juice. Muddle. Add tequila, tomato juice and ice. Shake vigorously. Pour over ice into tumbler, and garnish with fresh lime wedge and sprig of cilantro.
