Seed Collecting, Tools, Techniques & Tips

Basics tools needed to make the job of seed collection more efficient. Stainers of various sizes, bowls and platters are must have items. Make sure your seeds are dry before storing. Esp. the moist veggies. You don't want to think you have good seed stock only to find out later there is mold on them. Cucumber & tomato must be fermented in a glass jar w/ a small amount of water. Shake twice a day for 3-4 days. Put in strainer & rinse clean. Dry on paper plate in mild temp and dim light. Once you are sure they are dry, label the envelope with type & date. I make special notes if something out of the ordinary happened during the growing or collection phase. Happy Growing!

Tomato Alfredo...

Okay, so I had a few *sips* before making this vid, or whillle making this vid I should say lol.... But trust... The Alfredo is delicious - And if you would like to try it out, here is the recipe! So here is the Tomato Alfredo Recipe - Sould anyone care for it :) What You Need: Frying Pan Larger Pot for Noodles Medium Pot for Sauce 1 Medium Onion 1 Can Whole Tomatoes 1/2 tub Cream Cheese 1 box Spaghettini Noodles Olive Oil Butter or Margarine Garlic Powder Salt/Pepper *My recipe make enough for 3-4 people (depending on how much you eat lol). I would suggest adding a little more for a full 4 portion dinner. Step 1: Drain whole tomatoes in strainer. Take about 1/2 the can (approx 6-7), slice tomatoes in half and put on a plate. Dice Onion Step 2: In your frying pan, put approx 2tbsp olive oil in and coat the oil in the garlic powder (about 3tsp) Step 3: Add onions to olive oil, and sautee for about 5-6 mins - I added a little less than half a cup of water into the mixture so it wouldn't be sticky. I also add in about 1 tbsp of I can't believe it's not Butter. (Remember: Oil for cooking, butter for flavor!) Add in your tomatoes, and let simmer for approx 1-2 mins. Remove from heat. Step 4: In larger pot, have your water (and salt) ready for noodles. Start the boiling process. Step 5: Once you see your water has *almost* started to boil, it is time to start the alfredo sauce. Making Mozzarella Cheese (and Transglutamacurd...?) - Part 1

They are sped up between 150 - 200%.*** In the following video you will see us making American-Style Mozzarella Cheese. American-Style means that it is the version of mozzarella most of us consider to be "pizza cheese," although it is much fresher and tastier! In addition to making a normal pot of mozzarella cheese we are going to do a transglutaminase experiment with cheese and the Activa YG for dairy applications. We are running side-by-side the exact same setup for making mozzarella cheese, although the red pot will also contain some transglutaminase. Based on my research I found that transglutaminase supposedly increases the yield of cheese being made. Note in the cheese recipe below I make notes, especially at the end, about the addition of the transglutaminase. Please disregard that if you are just making mozzarella cheese. Recipe: Homemade American-Style Mozzarella Cheese *NOTE: See addition to this recipe at the end. The Machine

Each year near late August, we jar our own tomato sauce. We purchase around 10-18 bushels (depending on prior year's usage) for the produce market. The family gets together and we cook the tomatoes, then juice them, jar them, boil the jars to vacuum seal and store away. It's a traditional Italian chore each year. The process can be very labor intensive if you have to do the juicing by hand. My grandfather got tired of the manual crank machine. About 30 years ago, he converted our machine to an electric automatic machine by attaching an old washing machine motor to it. The "Machine" is a great example of how necessity is the mother of invention. Check out the "Machine" in running form.

For this recipe: www.nybg.org For more information visit NYBG.org Arugula, Blueberry and Feta Salad 3 tablespoons white balsamic vinegar 2 teaspoons honey Kosher salt and pepper 1/3 cup olive oil 4 generous cups wild arugula 5 ounces feta, cut into ½" cubes 1 cup blueberries 2 scallions, green and white parts thinly sliced In small bowl, whisk together vinegar, honey, kosher salt and cracked black pepper. Add olive oil in a slow steady stream, whisking constantly. Taste; adjust for seasoning. In medium bowl, gently combine arugula, feta, blueberries and scallions. If necessary, re-whisk vinaigrette; drizzle 1/3 cup over salad and toss to coat. Taste salad and add more dressing, if desired. Panzanella Salad This is a great way to use up day old bread. If the bread is fresh, simply cube it and spread out on a baking sheet.
