The Machine

Each year near late August, we jar our own tomato sauce. We purchase around 10-18 bushels (depending on prior year's usage) for the produce market. The family gets together and we cook the tomatoes, then juice them, jar them, boil the jars to vacuum seal and store away. It's a traditional Italian chore each year. The process can be very labor intensive if you have to do the juicing by hand. My grandfather got tired of the manual crank machine. About 30 years ago, he converted our machine to an electric automatic machine by attaching an old washing machine motor to it.
